Role Summary:
The Bar Supervisor at the Mermaid Tavern is responsible for the day-to-day operation of the bar, ensuring consistently high standards of drink service, bar presentation and cellar management.
You will lead by example on the bar, supervise bar staff, manage stock rotation, maintain product quality, and support the Pub Manager in delivering a safe, efficient and profitable bar operation.
Prior bar supervisory experience, strong product knowledge and a good understanding of cellar management and licensing regulations are preferred.

Key Responsibilities
 
  • Oversee the smooth running of the bar during service, ensuring drinks are prepared and served promptly and to specification.
  • Ensure all bar areas are clean, well-presented and fully stocked before, during and after service.
  • Maintain high standards of product quality, including correct pour, glassware, garnishes and presentation.
  • Monitor speed of service and support the team to reduce queues and waiting times at busy periods.
  • Lead bar staff on shift, delegating tasks and ensuring the team is working efficiently.
  • Train new and existing bar team members on drinks specs, draught pouring, cocktails, EPOS and bar procedures.
  • Carry out basic cellar duties including keg changing, line cleaning and real ale preparation in line with company procedures.
  • Monitor stock levels of draught products, spirits, wines, soft drinks and consumables, and communicate orders to the Pub Manager.
  • Ensure correct storage, rotation and handling of all beverages (FIFO).
  • Assist with stock takes and investigate variances where required.
  • Ensure all bar operations comply with alcohol licensing laws and company policies.
  • Responsible for occasional lockup/open in managers absence
  • Enforce age verification policies - Challenge 21 - and promote responsible drinking.
  • Ensure accurate recording and reporting of incidents, refusals and near-misses.
  • Maintain safe working practices in the bar and cellar, including correct use of gas systems and manual handling.

Competencies Required
  • Proven experience supervising a bar team in a busy pub or similar environment.
  • Excellent product knowledge and passion for beers, wines, spirits and cocktails.
  • Strong organisational and time-management skills.
  • Ability to remain calm, professional and focused under pressure.
  • Confident communicator with strong leadership skills.
  • Flexible to work evenings, weekends, bank holidays and peak seasonal periods.
  • Physically fit and able to work on your feet for long periods.

Technical Skills Required
  • Strong hands-on experience behind a bar, including draught pouring and cocktail preparation.
  • Good working knowledge of cellar operations including line cleaning, keg changing and gas (CO₂ / mixed gas).
  • Experience using EPOS systems and PDQ/card payment terminals.
  • Understanding of alcohol licensing laws and responsible service of alcohol.
  • Basic understanding of stock control and wastage reduction.

Qualifications / Experience Required
  • Previous experience in a Bar Supervisor or Senior Bartender role is preferred.
  • Formal training in cellar management, bar skills or licensing is desirable 
  • Knowledge of food safety and allergens is a plus.


General
  • The role requires a high level of stamina as most days will require you to be on your feet. 
  • This role requires a high-level of fitness and the ability to lift and carry large/heavy items.

Working within the Health and Safety at Work (General) (Guernsey) Ordinance, the postholder has a legal duty to take reasonable care for Health and Safety both for themselves and others who may be affected by their actions. They are also required to undertake Health and Safety training commensurate with the level required by the post and to take part in risk assessment procedures and the implementation of agreed recommended work practices within the area. 
  
Undertaking other duties not specifically stated which from time to time are necessary without altering the nature or level of responsibility.

    • a busy shop which stocks a host of products from gifts and clothing to beach goods and toys. 

Working in Herm 
 
Working and living in Herm is a truly unique and rewarding opportunity. There are approximately 50 permanent staff with year-round roles with up to an additional 100 seasonal staff. 
  
The hospitality teams are supported by several back-office departments including finance, reservations, administration, marketing, and recruitment. The island properties, infrastructure and landscape are maintained by a team of professionals and the island also has its own cargo vessel managed by the Services team. 
  
As there are no cars or bicycles in Herm a good degree of fitness is required to negotiate the varied terrain. With no resident doctor or hospital, shortlisted applicants are advised to self-assess their suitability to work on the island. Several residents are trained as community first responders delivering first aid, policing, and fire services.
